Celery Gin & Tonic

I'm scrambling to take pics and put this post together at the 11th hour, the night before I go on vacation (wahooooo!) for one reason, and the reason is this: I LOVE this cocktail, and keeping from you for another week just wouldn't be right. I've been so excited about it since I first made it last weekend.

We get the most amazing celery from our CSA. Celery, you say? No, really. It's full of flavor and amazing. More like an herb than the celery you may know. Pick some farmer's market celery up, turn it into an awesome syrup, and throw together these super easy gin & tonics that are turned up a notch. They're refreshing and just what you need. Promise.



2 1/2 oz gin
3/4 oz celery syrup *
1/2 oz fresh lime juice
tonic water
lime wheel & celery sprig garnish

Shake gin, celery syrup, and lime juice with ice, and strain over fresh ice in a highball glass. Top with tonic water, and garnish with a lime wheel and celery sprig.

*To make celery syrup, chop 2 cups of celery, including leaves. Prepare simple syrup, mixing 1 cup sugar and 1 cup water on the stove and heating til dissoved. Add celery and continue to cook, stirring periodically, for 1 minute. Turn off and allow to steep for 1 hour. Strain and keep refrigerated.
