Right now, I'd like to go away for a few weeks of summer camp of my own. Swimming, weaving, ghost stories. I'll settle for weekends in the yard with a blow up pool and a slushy, fruity, boozy drink in hand. These Peach Mint Juleps are just what I'd like to be sipping. Super easy and refreshing. They work equally well with feet up on a front porch or after a long day at the beach.
Grab some peaches and mint, and get mixing. If you don't have honey, feel free to substitute simple syrup.

PEACH MINT JULEP
2 1/2 oz bourbon
1/4 peach, sliced
3/4 oz honey syrup (mix equal parts honey and hot water, stir to dissolve, and cool)
2 mint sprigs
Muddle one mint sprig, peach slices, and honey syrup in the bottom of a julep glass. Add bourbon and stir. Fill glass with crushed ice and garnish with a mint sprig.
