While I LOVE whiskey, it gets all the credit in the Hot Toddy department. This toddy variation, made with dark rum, is a wintery version of a Dark & Stormy. I love a Dark & Stormy's flavors: rich but clean with some nice spice. They work equally well in a hot drink.
Replete with a spicy ginger syrup which is ridiculously easy to make (you don't even have to peel the ginger!), the drink is toasty and delicious. I made these this weekend for a brunch, and they were killer. Easy to prepare at someone else's house, and easy drinking enough for everyone's taste. It's the perfect time of year for a hot cocktail! Bottoms up!
Hot & Stormy
2 oz dark rum
1 oz ginger syrup*
1 lime wedge
4 oz hot water
1 cinnamon stick for garnish
Add all ingredients to mug, squeezing lime juice into the mug and tossing the wedge in; stir, and garnish with cinnamon stick.
4 c water
2 c sugar
1 1/2 c ginger coarsely chopped in about 1/2" pieces
Bring all ingredients to a boil in a non-reactive pan. Reduce to a rolling simmer until mixture is reduced to approximately half (about 45 minutes). Strain and store in fridge.
