We're hosting a big BBQ in the backyard a few weeks from now for Louella's school friends and all of their families. Sort of an end-of-the-year shindig. The kids have been practicing a "show" that they want to put on for the parents and have requested popcorn be on the menu. And I've been doing the adult equivalent: testing cocktails in preparation. We've decided on the old classic Tom Collins. It's refreshing, lemony, and universally likeable—perfect for summer.

We served ours in the "Gluttony" glass from our Seven Deadly Sins Glasses set. We used Old Tom Gin—it's a bit sweeter and is thought to be how the cocktail got its name—but regular old London Dry is delicious as well. 

TOM COLLINS

1 1/2 oz Old Tom gin
3/4 oz fresh lemon juice
3/8 oz simple syrup (3/4 oz if you're using London dry gin)
club soda
cherry
lemon wheel

Add lemon juice, simple syrup, and gin to an ice filled shaker. Shake well and strain into glass filled with ice. Top with club soda, and garnish with lemon wheel & cherry.
